Quick Dinner

Rachael writes, "I need a new, great, quick midweek meal that everyone will like. Got any ideas?"

Answer: How about throwing a quesadilla party? Sure, quesadilla is thought of as a Mexican appetizer in many trendy restaurants. But, you can make it into a complete midweek meal by simply altering the ingredients.

Quesadilla are easy to make. The technique is a breeze. Warm a skilled over medium high heat. Spray the bottom with a vegetable oil spray. Place one tortilla in the hot pan. Layer with shredded cheese and every other ingredient that suits your fancy. Top with another tortilla shell. Cook, until the bottom shell begins to brown and the cheese begins to melt. Use a spatula to flip over the quesadilla and continue to cook until all the ingredients are warmed through. Remove to a platter, cut into wedges and garnish with salsa, sour cream, guacamole and diced onions.

Here are a few filling suggestions:

  • Monterey Jack cheese, cooked bacon pieces, sliced sautéed mushrooms, and diced green onion.
  • Cheddar cheese, browned ground beef flavored with taco seasonings, and sautéed onions.
  • Swiss cheese, sliced cooked chicken breast and grilled red bell peppers.
