Very Veggie Celebration

Card night and you are in charge of the food. The emphasis is on the game, so you want everything ready when the group gets hungry.


Recipes for this party plan can be found in At Home Entertaining beginning on page 237 including: Jicama Slaw with Sesame Dressing, Veggie Burgers with Spicy Cranberry Mayonnaise, Roasted Root Vegetables with Balsamic Glaze, Lemon Pound Cake with Blueberry Sauce



The slaw gets better if you prepare it the evening before. The veggies can be assembled into patties and grilled just before serving. The roasted vegetables bake while you get the first round of cards completed. The pound cake and sauce can be baked in the morning.


It’s simple to scale this party up to feed extra drop-by guests. Simply increase the numbers of veggie burgers and up the number of roasted root vegetables. For extra fun – and to stretch the meal a bit further - serve the burgers open face on 1 half of a bun and top with a spoonful of slaw.
