A Lunch Bunch

At noontime is there a group of people hanging around the makeshift kitchen office waiting for his or her turn at the microwave oven? Perhaps you are looking to be a kinder and gentler employer and want to encourage your co-workers to spend quality time with each other – sort of a team building exercise. Maybe you are looking for some free time during the workday or a way to limit those fast food, high calorie lunches on the run. The idea of eating and not enjoying the taste of the food, or sharing that time socializing with others is a casualty of our fast paced society. But, there is an alternative experience. Start a Lunch Bunch - a terrific vehicle for pals coming together, eating well, and enjoying some moments of pampering during the workweek.


Recipes for this party plan can be found in At Home Entertaining beginning on page 57 including: Easy Broccoli and Cheese Soup, Quick Chili with Lentils and Black Beans, Spicy Grilled Chicken Salad with Roasted Asparagus, Yellow Peppers and Creamy Basil Vinaigrette, Cobb Salad Wrap Arounds, Roasted Tomato and Ricotta Tart, Oatmeal Chocolate Chip Cookies



Both the soup and the chili can be prepared the evening before. Cover the pot with a lid and refrigerate. In the morning, while you are getting read for work, reheat over low heat. Pour into 4 thermoses and pack. Prepare all of the ingredients and the dressing for the salad the evening before. Arrange in individual disposable plastic containers and pack in an insulated cooler. Drizzle the dressing just before serving. The wraps can be made the evening before and refrigerated. Assemble the tart the evening before and bake in the morning. Cover the baking sheet with aluminum foil. Cut into squares and serve at room temperature. Bake the cookies the day before – not two days before. (They seem to disappear quickly!)
