Grilled Florida Lobster Tail with Garlicky Tomato Sauce

Florida lobster tail comes into season for a short time at the end of the summer. It is well worth the wait. The sweet meat is easily prepared in a variety of ways. Try this grilled version using my favorite kitchen gadget - the grill pan!!

Step-By-Step Illustrations
Butterfly the lobster tail and season each one
Use a grill pan to cook the lobster, flesh side down
Turn the lobster tails once
Prepare the rich garlicky sauce
Serve each lobster tail with a generous spoonful of sauce over top



This sauce will work well with every kind of shell fish. Feel free to substitute grilled scallops or shrimp. You can also serve it over mussels or swordfish.
