Risotto with Wild Mushrooms

The secret to a really silky risotto is to slowly add the warm liquid a ladleful at a time so that the Arborio rice releases it's creamy starchiness.

Here is another tip for perfecting great risotto. Use a pan to warm the stock and ladle it directly into the rice. For the best results add the Parmesan cheese and the cream just before you are ready to serve.
