Veal and Spinach Filled Manicotti This great dish is worth the extra effort. Make enough to freeze an extra pan full of manicotti for use on a day when time is limited.

To make sure that all of the moisture is removed from the frozen spinach, drain it through a colander. Use paper towels to squeeze the spinach into the colander and remove the excess water. The drier the spinach, the better the filling.

Baked pasta casseroles are a favorite dish to make in advance and freeze for later use. Take a look at the recipe for Baked Ziti to see another Italian style casserole.

Cindy G. notes, "This is a terrific family dinner, but I like to make it for a ladies' luncheon with steamed broccoli and an over-the-top dessert."
