Veal and Spinach Filled Manicotti

This great dish is worth the extra effort. Make enough to freeze an extra pan full of manicotti for use on a day when time is limited.

Step-By-Step Illustrations
Combine the ingredients for the filling in the bowl of a food processor
Stuff the cooked noodles with the filling

To make sure that all of the moisture is removed from the frozen spinach, drain it through a colander. Use paper towels to squeeze the spinach into the colander and remove the excess water. The drier the spinach, the better the filling.
