Potato, Carrot and Leek Soup with Fresh Ginger

As a first course, serve this soup either hot or cold. The texture is rich and creamy. The aroma of the ginger and the sweetness of the carrot make the dish remarkably appealing.

Leeks, which come from the onion family, add a wonderful flavor to soups. The white part of the leek is utilized while the tough green stalks are usually discarded. In most cases they can be very dirty. To clean a leek, cut it in half lengthwise. Break apart the white leaves and soak the leek in a bowl of cold water. The dirt will fall to the bottom of the bowl. Remove the leek from the water, pat dry and continue with the recipe.
