Spinach with Caramelized Onions

Can you believe many people still wriggle their nose at the thought of eating spinach? This recipe is sure to change even the most faithful spinach-hater's mind. The sweetness of the caramelized onions blends with the balsamic vinegar to set off the tartness of the spinach.

Spinach needs to be washed thoroughly and dried to remove any grit that clings to the leaves. Pre-washed bags of spinach are available and while they are slightly more expensive, it does save some time in the kitchen.
