Moroccan Spiced Rotisserie Chicken

For outdoor entertaining there is nothing as easy as using the rotisserie attachment to your barbecue. The secret is to use the tongs that hold the meat onto the spit correctly. Try to scrunch the legs into the tongs instead of allowing the tongs to pierce the meat. This will insure that the juices remain inside the food.

Step-By-Step Illustrations
Skewer the chicken and rub the spice mix all over the skin
Place the chicken next to the heating element on the barbecue
Make sure that you place a pan under the revolving chicken to catch the juices
Remove the chicken to a platter and release the skewer
