Grilled Artichokes and Baby Portabella Mushroom Salad

The dramatic presentation of this dish makes it look harder than it is. The warm artichokes and mushrooms sit atop chilled greens lightly tossed with oriental flavored vinaigrette.

The size of your artichoke will determine the cooking time. A large artichoke in steamed in a microwave oven will take 15 minutes. Check it after 8 to 10 minutes. A large artichoke steamed over medium high heat will take longer - as much as 20 to 30 minutes depending on freshness. Just remember to use the fork test to determine when your artichoke is done.
