Fresh Greens with Ginger Lime Dressing


This spicy dressing comes together quickly and offers a tangy dinner starter. Serve fresh pear slices or mandarin orange sections in place of apples for a fun salad treat.

4 cups fresh salad greens
1 apple, sliced into thin wedges

1/4 cup rice wine vinegar
the juice of 1 lime, about 2 tablespoons
1 garlic clove
1 tablespoon fresh ginger, peeled and cut into pieces
2 green onions, chopped
1 tablespoon honey
1/2 cup peanut oil
salt and freshly ground pepper

1. Place the fresh greens and apple slices into a serving bowl. Chill.

2. Place the rice wine vinegar, lemon juice, garlic, ginger, onion and honey in the bowl of a food processor. Pulse to combine.

3. With the blade running, slowly pour in all of the peanut oil until the dressing is emulsified.

4. Season with salt and freshly ground pepper.

5. Toss the salad with a drizzle of the ginger dressing. Use additional dressing to garnish the plate.

Serves 4
