Bake the scones in advance and keep them warm in a 200-degree oven. Prepare the ham steak and sauce. This will keep warm in the same oven while you prepare the egg dish. Chop all of the ingredients, warm the beans and cook the tortillas. Layer the warm tortillas with the beans and keep warm in the same oven while you fry the eggs. When the eggs are cooked, complete the dish and take everything to the table.
