Chocolate Cookie Cheesecake Bars
Cheesecake meets cookie and everyone wins with this dessert. Dip whole chocolate cookies in melted chocolate to decorate a platter full of cheesecake bars.
40 chocolate sandwich cookies
1/2 stick butter, melted 1/4 cup
3 (8 ounce) packages cream cheese, room temperature
3/4 cup granulated sugar
4 eggs
1 cup sour cream
1 teaspoon vanilla extract
2 cups sour cream
1/4 cup powdered' sugar
1 teaspoon vanilla extract
Preheat oven to 350 degrees.
- Prepare 13 x 9 x 2 inch baking dish by spraying with vegetable oil spray.
- Place 25 of the cookies in a food processor. Pulse until they become crumbs. Add the melted butter and pulse again.
- Press the mixture into the bottom of the dish using the back of a fork.
- Break the remaining 15 cookies into chunks.
HELPFUL HINT: Place the cookies in a plastic bag. Gently pound the bag with a rolling pin or meat mallet to produce chunks instead of crumbs.
- Use an electric mixer to beat together the cream cheese and sugar until fluffy. Add the eggs one at a time. Mix in the sour cream and vanilla extract.
- Stir in the chocolate sandwich cookie pieces.
- Pour the batter on top of the crust. Bake for 45 minutes or until the center is set.
- Mix together the sour cream, sugar and vanilla.
- Remove the cheesecake from the oven. Pour the sour cream mixture over the top. Return to the oven for 5 more minutes.
- Remove the cake from the oven to a wire rack and cool. Cover the dish with plastic wrap. Chill in the refrigerator for at least 4 hours or overnight.
To serve cut into 2 inch squares and place on a platter dusted with cocoa powder.
Yield 12 bars
Preparation time about 1 hour plus refrigeration
