Chocolate Cookie Cheesecake Bars

Cheesecake meets cookie and everyone wins with this dessert. Dip whole chocolate cookies in melted chocolate to decorate a platter full of cheesecake bars.

40 chocolate sandwich cookies
1/2 stick butter, melted 1/4 cup
3 (8 ounce) packages cream cheese, room temperature
3/4 cup granulated sugar
4 eggs
1 cup sour cream
1 teaspoon vanilla extract

2 cups sour cream
1/4 cup powdered' sugar
1 teaspoon vanilla extract


Preheat oven to 350 degrees.
  1. Prepare 13 x 9 x 2 inch baking dish by spraying with vegetable oil spray.
  2. Place 25 of the cookies in a food processor. Pulse until they become crumbs. Add the melted butter and pulse again.
  3. Press the mixture into the bottom of the dish using the back of a fork.
  4. Break the remaining 15 cookies into chunks.

    HELPFUL HINT: Place the cookies in a plastic bag. Gently pound the bag with a rolling pin or meat mallet to produce chunks instead of crumbs.

  5. Use an electric mixer to beat together the cream cheese and sugar until fluffy. Add the eggs one at a time. Mix in the sour cream and vanilla extract.
  6. Stir in the chocolate sandwich cookie pieces.
  7. Pour the batter on top of the crust. Bake for 45 minutes or until the center is set.
  8. Mix together the sour cream, sugar and vanilla.
  9. Remove the cheesecake from the oven. Pour the sour cream mixture over the top. Return to the oven for 5 more minutes.
  10. Remove the cake from the oven to a wire rack and cool. Cover the dish with plastic wrap. Chill in the refrigerator for at least 4 hours or overnight.

To serve cut into 2 inch squares and place on a platter dusted with cocoa powder.

Yield 12 bars
Preparation time about 1 hour plus refrigeration
