Grilled Calamari

This dish is a fast and festive party starter or a quick, light midweek meal. Either way, the secret is to find fresh squid that is cleaned well.

This is a most simple grilled recipe - and yet you must pay attention to the cooking time. Overcooked, calamari is tough - unless you are cooking it in a sauce or stew. For this recipe, you want to cook it only a minute or two - until just opaque. The result is wonderful.
