Chopped Salad with Gorgonzola and Sun Dried Tomato Thousand Island Dressing

Whether you are planning for a party or just want a quick and yummy supper, this salad is a perfect dish for the busy family. The crisp veggies are chopped into bite size pieces. The rich Thousand Island salad dressing takes on a new twist when made with sun dried tomatoes and fresh parsley.

This dressing is really thick. It's meant to be that way. You don't want to drown the salad in the dressing. Add just a little at a time until and it holds together like potato salad. If you want a thinner dressing to drizzle simply add some water and pulse again.


Sun Dried Tomato Thousand Island dressing can stand alone as a dip for crudités or as a sauce for Chilled Roasted Asparagus.
