Spinach, Apple and Pecan Salad with Citrus Vinaigrette

Toasted pecans add an interesting flavor to fresh spinach leaves in the easy salad recipe. The sweetness of the apple is offset by the tartness of the vinaigrette.

There are many ways to combine the ingredients for totally emulsified vinaigrette. This recipe suggests whisking the ingredients in a bowl. Others ask you to use a food processor. Either method is acceptable. Just remember to add the oil at the end, in a small slow stream in order to thoroughly incorporate it into the dressing.
