Grilled Lime Chicken Salad

This recipe is a snap to make ahead and serve for a luncheon or outdoor summer supper. Marinate the chicken in the morning, before you leave for work or errands. Then assemble the salad when you return home for a quick and yummy midweek meal.

You will notice that the dressing for this salad is lime juice and a drizzle of olive oil. That's because the fresh vegetables and lightly seasoned chicken combine for a terrific blend of tastes. This is only accomplished by incorporating "just picked from the garden" produce. Don't try this with over ripe veggies. Save them for soup!
