Pasta Salad with Southwestern Vinaigrette

Serve this pasta salad as a light supper or as a satisfying side dish. The easy preparation allows for all of the ingredients to be tossed with the vinaigrette and chilled until you are ready to serve.

This salad is begging for you to make it your own. Substitute with your favorite ingredients. Suggestions: try elbow macaroni or fusilli pasta in place of tortellini, chunks of Swiss or Monterey Jack cheese for cheddar, and sun-dried tomatoes in place of roasted peppers.
