Tortilla Soup

The garnish is the fun part of this soup. Lightly fried thin strips of tortilla are clumped on top of the soup for a terrific presentation.

Step-By-Step Illustrations
The rich broth begins by sauteeing diced vegetables

Ladle the strained broth over chunks of chicken then garnish with grated cheese, avocado slices and fried tortilla strips



The garnish of crisply fried tortilla makes a huge impact on this dish. Remember a few words of caution when frying anything in hot oil. Do not fill the pot more than halfway up the sides with oil. As oil boils it will bubble up to the top of the pan. Add the food you are frying to the pot at the farthest point away from you. Use a splatter cover to reduce splashing. And NEVER - EVER leave hot oil unattended or within the reach of children!
