Baked Zucchini with Parmesan Cheese

This is a terrific way to prepare a sturdy vegetable. How thick you cut the zucchini determines the actual cooking time.

You can use this basic recipe and change the presentation of the veggie. Instead of cutting the zucchini into thick circles, cut it in half lengthwise. Scoop out a portion of the center pulp. Fill this section with the Parmesan cheese and breadcrumb mixture. The result - stuffed zucchini boats!
